In a blender, I threw in
-9 eggs,
-1 cup 2% cottage cheese (you can also use part-skim ricotta)
-1/2 cup cheddar cheese,
-1/2 tsp salt and
-1/4 tsp pepper. I then sauteed
-1/2 onion,
-handful of mushrooms and some
-spinach in a tiny bit of butter and spooned it into each cup.
I poured the mixture into a 12-cup muffin tray, and voila! I used parchment paper muffin cups.
I decided to make another batch, to which I added some turkey bacon – I cooked the bacon beforehand, chopped it up and spooned it into the muffin cups.
